Recipe of the Month: Spiced Pumpkin Oat Bread

Pumpkin Bread

Nothing says Fall like pumpkin bread! Enjoy this delicious seasonal treat as a snack or your carb portion at breakfast, during any phase of The Serotonin Power Diet.


  • 1 cup rolled oats
  • ½ tsp salt
  • 1 ½ tsp baking soda
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • ½ tsp allspice
  • ½ tsp nutmeg
  • 3 cups whole wheat white flour
  • 4 eggs
  • ⅓ cup apple sauce
  • ¾ cup brown sugar
  • ¾ cup sugar
  • ½ cup plain, nonfat Greek yogurt
  • 1 can of pumpkin
  • 1 T vanilla
  • 1 or 2 T Oats to sprinkle on top


Preheat oven to 350 degrees.

Pulse oats in a blender until finely chopped.  Combine with salt, baking soda, baking powder, cinnamon, ginger, allspice, nutmeg, and flour.  Set aside. 

In a large bowl, beat eggs, apple sauce, both sugars, yogurt, pumpkin, and vanilla on medium speed until well combined.  Add dry ingredients and beat on low until just combined.

Spray 2 9” x 5” loaf pans with non-stick cooking spray.  Divide batter evenly between the pans, sprinkle with oats, and bake for 50 minutes or until done.  Enjoy!


Recipe makes 2 loaves (one to enjoy and one to share), 12 slices each. Feel free to divide recipe into two if you’d like just one.
