Recipe of the Month: Holiday Light Cookies

Cookies are an integral part of the holiday experience. However, not all cookies are created alike. This holiday cookie recipe is a lighter option that is sure to please!

  • 1 T unsalted butter, softened
  • 1/4 cup unsweetened applesauce
  • 1 1/4 cup sugar
  • 1 egg 
  • 2 tsp vanilla
  • 1 3/4 cups flour
  • ½ tsp baking powder
  • 3/4 tsp salt
  • ¼ cup decorative sprinkles and/or colored sugar
  • Love in your heart to add that je ne sais quoi homemade sweetness.


Combine the applesauce, butter, egg, and vanilla in a bowl and, using an electric mixer, beat at medium speed for a minute.  Combine the flour, baking powder, and salt and mix into the wet mix, until well blended.  Form into a doughball, tightly wrap in plastic film, and refrigerate for 30-60 minutes, or until firm. 
Preheat oven to 350 F.  Cover a cookie sheet with parchment paper.  Roll 1 1/2” balls of dough and roll into decorative sprinkles and / or colored sugar.  Place on the prepared cookie sheet and bake for 14-15 minutes until firm but not yet browned.  Enjoy 2 cookies as a snack.
