Oat bran is the outer layer of the oat groat just beneath the outer hull. Oat bran has the same beneficial nutrients as steel cut and whole oats yet it has more fiber and protein. When cooked or soaked, it has a creamy texture many people enjoy.
1 cup soy or dairy milk
1/2 cup oat bran
1/2 cup frozen or dried Blueberries
2 T chia seeds
1 T maple syrup
1 T shredded unsweetened coconut
1 Tsp coconut oil
¼ Tsp vanilla
½” grated fresh ginger OR ⅛ Tsp ground dry ginger
Pinch of salt
Optional: Fresh, frozen, or dried blueberries and shredded coconut for garnish
Combine all ingredients except garnish in a container you can cover and refrigerate overnight. When ready to eat, transfer to a bowl and garnish with blueberries and shredded coconut. Enjoy!
